چکیده

Fifty-nine steers produced from the crossing of Braford, Simbrah, Senepol and Simmental bulls to Brahman-sired and Romana Red-sired cows, and from the mating of Brahman bulls to Angus cows were used in this study to determine effects of breed group and age-season of feeding on fat distribution in depots of the chuck. Half of the steers were placed in the feedlot immediately afterweaning, and the others were stockered during the winter and fed as yearlings during the summer. Steers were slaughtered at a compositional equivalent endpoint (.4 in external fat) as determined by visual appraisal and with realtime ultrasound monitoring. Percentage seam fat in the chuck did not differ ( P < .05) among breeds or age-season of feeding; however, percentage subcutaneous fat was greater (P<.05) in the Braford-sired steers than in steers of the other sire-breed groups.

Factors influencing intermuscular fat and other measures of beef chuck composition.

Carcasses from 59 steers produced from the mating of Braford, Simbrah, Senepol, and Simmental bulls to Brahman- and Romana Red-sired cows and Brahman bulls mated to Angus cows were used in this study. Effects of sire breed and feeding calves vs yearlings on fat depots in the chuck, when steers were fed to 1.0 cm external fat, were determined. Breed of sire and feeding calves vs yearlings had no...

Effect of extruded full-fat soybeans on conjugated linoleic acid content of intramuscular, intermuscular, and subcutaneous fat in beef steers.

Crossbred Angus steers (n = 30) were used to determine whether the conjugated linoleic acid (CLA) content of beef fat could be increased by feeding varying levels of extruded full-fat soybeans as a source of polyunsaturated fatty acids for rumen biohydrogenation. Diets were as follows: 1) control, 2) 12.7% extruded full-fat soybeans (LESB), and 3) 25.6% extruded full-fat soybeans (HE SB). Steer...

Novel single nucleotide polymorphisms of the bovine methyltransferase 3b gene and their association with meat quality traits in beef cattle.

DNA methylation is essential for adipose deposition in mammals. We screened SNPs of the bovine DNA methyltransferase 3b (DNMT3b) gene in Snow Dragon beef, a commercial beef cattle population in China. Nine SNPs were found in the population and three of six novel SNPs were chosen for genotyping and analyzing a possible association with 16 meat quality traits. The frequencies of the alleles...

National Beef Market Basket Survey - 2006: External fat thickness measurements and separable component determinations for beef from US retail establishments.

A market basket survey for beef retail cut composition at the retail level (four stores each from two chains in each city) was conducted in 11 US cities from January to March 2006. Beef cuts (n=17,495) were measured for external fat thickness with cuts from the chuck (0.05cm), round (0.05cm), and miscellaneous (0.04cm) having less (P<0.05) fat than cuts from the loin (0.11cm) and rib (0.11cm). ...

Evaluation of Temperament and Transportation Stress on Body Composition Traits and Meat Quality in Beef Cattle

Stressors can be psychological (restraint, handling, or novelty) or physical (hunger, thirst, fatigue, injury, or thermal extremes) (Grandin, 1997). Temperament has been associated with stress responsiveness in which higher concentrations of cortisol have been correlated with temperament of cattle (Curley et al., 2006; King et al., 2006). In addition, Smith and Grandin (1999) reported that appr...
